Those of you living in the UK will be enjoying the amazing summer weather, which inspired me last weekend to rustle up a refreshing drink to enjoy in the sunshine. This iced tea or sweet tea syrup can be added to water to be enjoyed with lemonade to create a refreshing soft drink or with a splash of vodka added for an alcoholic Arnold Palmer cocktail.

Homemade Iced Tea Syrup

A recipe for homemade iced tea syrup concentrate which can be served with lemonade and vodka to make an alcoholic Arnold Palmer cocktail. Makes just over 1 litre of syrup

You will need
- For the Syrup:
- 1 litre of water
- 1 kg fair trade white sugar
- 10 fair trade tea bags
- 1 lemon
- 1 handful of fresh mint leaves
- To Serve:
- Lemonade
- Vodka (optional)
- Lemon
- Fresh mint
- Pomegranate
Instructions
- Boil the water in a saucepan and add the zest and juice of one lemon and most of the mint leaves.
- Add the tea bags and reduce to a very low simmer for 10 minutes.
- Remove the tea bags and mint leaves from the pan and add the sugar. Simmer for a further 2 minutes or until the sugar has dissolved.
- Strain the syrup through a fine sieve and leave to cool.
- Mix 1 part syrup with 5 parts lemonade (or to taste) and add 35ml of Vodka (optional). Serve over ice with a slice of lemon, a sprig of mint and some pomegranate seeds.
- The syrup may be stored in sterilised bottles in the fridge for up to 2 weeks.
